Brick-Oven Pizza‏

A word about our pies: we make our pizza pretty much the same way they do it in new haven ct, the pizza capital of the world. We run our ovens at close to 700 degreesf, cooking the pizzas super-fast and creating spots of superficial char on the crust. It creates great flavor… but if you think you’d like less char, please inform us ahead of time. All pies are 16”

We currently make four year-round beers along a wide and ever-changing variety of seasonals, one-offs, experiments, and labors of love. all of our beers feature pilsner malt from gambrinus malting in British columbia as the base ingredient, supplemented by various high-quality specialty malts and often copious amounts of hops.

The Vaporizer

Two X Four

Anniversary ale.to honor our fourth anniversary in style, we brewed this strong ale with our two house yeasts (kölsch and rochefort), four hops (simcoe, magnum, chinook and goldings), and six malts (pilsner, wheat, light munich, dark munich, crystal and pale chocolate). The rich malty backbone is redolent of dark fruits and fruity alcohol; a mouthful of poppin’ hoppiness provides a lingering bitterness that lasts forever. Sacré Bleu

12 oz. Goblet. This is the second beer of our holy trinity series of belgian trappist-style releases. We’re using the house yeast from the abbaye de scourmount, their beers simply labeled chimay, the abbey’s home town. Sacré bleu! Is loosely based in the dubbel style, using darker malts to provide some nutty earthiness and light chocolate character. The malt flavors blend with the signature yeasty notes of fruit, nutmeg, and vanilla to provide for a wonderfully complex beer. 8% ABV, 35 bu

Devil's Kriek 2010 Belgian-Style Sour Ale with Cherries

It is with great pleasure that we brew devil's kriek once a year at cherry harvest, and let it develop its intensity for a full twelve months, until it's time to do it again. This year's batch is intensely dark and fruity, thanks to over 70 lbs. Per barrel of bings (twice what we used last year) from matt's orchard in odell. The light sourness comes not from sour cherries, but from brettanomyces "wild yeast", which slowly add the tang and a host of other funky flavors. A brown ale base provides a tasty counterpart to the fruit. 8.3% ABV

Red Light District

12 oz. Goblet. Rld completes the trifecta of our foray into the dry trappist yeast. The brew’s reddish color is derived from addition of roasted caramel malts and its alcohol sweetness from the late addition of 200 lbs of wildflower honey. This is the strongest of the three beers and the honey sweetness lingers more than its nipelly cousin, giving more depth and some fig fruitiness. Should you try all three beers of the series late in the evening, you may find yourself window shopping down the wrong street in amsterdam. 9.4% ABV, 30 bu

Killer Green 2008

The folks at weathers farms supplied us with some beautiful perle hops this year, which lent a more balanced aroma to our'08 effort. Matt chose to tweak this year's brew with more malt and some simcoe hops (dried, not fresh), which helped to make the beer bigger in all respects. A seriously heady beer! Molten Lava

This is‏ hop lava's bigger, meaner cousin -- a radiant orange-hued beer featuring more than six pounds of hops per barrel. The out-of-control hopping is barely balanced by a tight malt backbone and noticable alcohol notes. We used our kolsch yeast on this one, which gives it a different type of fruitiness than the belgian ale yeast used in hop lava. Matt's own "bohemian rhapsody", featuring traditional ingredients used in a distinctly northwest recipe. We aged this beer for between six and nine weeks -- two to three times our normal program -- to give our czech lager yeast enough tie to do its thing, and to allow the flavors to mellow and merge.
